BANANA BREAD

Banana bread is a sweet and cake-like bread that is easy to like. With this recipe, you can turn brown bananas into a really juicy and good banana bread with an exciting spicy taste of cinnamon, nutmeg and cloves. Serve banana bread for your coffee or have it as a snack in the packed lunch.

You need:
160 g oatmeal
About. 8 bananas (680 g when peeled) + 3 for garnish
230 g yoghurt naturell
4 store egg
2 teaspoons vanilla sugar or essence
100 g Norwegian Honey from Honningcentralen
560 g of wheat flour
2 teaspoons bakingpowder
2 ts natron
1.5 tsp flaxseed salt
1.5 teaspoons malt cinnamon
1 teaspoon cloves
0.5 teaspoon ground nutmeg
150 g coconut oil
150 g of olive oil
340 g walnuts / pecans, roasted

Preheat the oven to 180 degrees.

Run the oatmeal into flour in a food processor and set aside.

Mash the bananas (680 g peeled fruit), preferably in the food processor, and mix them with yoghurt, eggs, vanilla and honey in a bowl. Leave for 30 minutes to ripen the bananas extra.

In another bowl, mix together wheat and oatmeal, spices, baking powder, baking soda and oils until you have crumbs. Melt the coconut oil first if it is firm. Stir in the banana mixture until you have a smooth mass and turn the nuts over.

Pour the batter into three greased loaf tins. Place a banana in each, cut in half lengthwise, with the cut side up. Bake the breads for about 70 minutes and cool on a rack in the mold. The breads can be frozen.
