Hazard Analysis and Critical Control Points System ( HACCP)

The Hazard Analysis and Critical Control Points (HACCP) is a systematic preventive process to guarantee food safety, in a logical and objective way. It is applicable in the food industry and in all types of industries that manufacture materials in contact with food. It identifies, evaluates and prevents all risks of contamination of products at a physical, chemical and biological level throughout all the processes of the supply chain, establishing preventive and corrective measures for their control aimed at ensuring safety. The HACCP has the objective of developing systems that provide a high level of guarantees on food safety.

 

ISO 22000:2005

ISO 22000 is the international standard for food safety management systems for the entire supply chain, from farmers and ranchers to processors and packaging, transport and point of sale. ISO 22000 specifies the requirements for a food safety management system involving interactive communication, system management, and prerequisite programs (PRPs). The standard focuses on securing the supply chain, has principles of integrated management systems and is aligned with the HACCP principles of the Codex Alimentarius.

ISO 22000 is recognized throughout the global food chain. ISO 22000 certification publicly demonstrates commitment to food safety. It is based on state-of-the-art good practices and is designed to:
