POTATO SALAD WITH HONEY

Homemade potato salad with honey is a lovely accompaniment to barbecue food. Garlic, bacon and Dijon mustard together with the sweetness from Organic Raspberry Honey help to elevate this potato salad to a taste experience. A new favorite at the barbecue?

4–6 PORTIONS

You need:
1 kg potato, feel free to choose the small potato
1-2 cloves garlic, divided into two
100 g bacon slices, in «cubes»
1-2 shallots, finely chopped
1-2 tablespoons basil / parsley, finely chopped
1 teaspoon thyme, finely chopped
1/2 tablespoon chives, finely chopped
1/2 lemon, juice
1 tbsp dijon mustard
1 tablespoon raspberry honey from Honningcentralen
2 tablespoons olive oil
2 teaspoons apple cider vinegar
Salt and pepper

Wash the potatoes well. Boil lightly salted water in a saucepan over medium-high heat.

Put the potatoes and garlic in the pan and turn down the heat. Let the potatoes cook under a lid for 15-20 minutes or until cooked through. Cool.

Fry the bacon crispy.

Mix potatoes, bacon, shallots, basil / parsley, thyme and chives in a serving bowl. Set aside.

Mix lemon juice, Dijon mustard, raspberry honey, olive oil, apple cider vinegar and salt and pepper in a small bowl. Pour over the potato salad and mix well. Serve cold before serving.
